When we do a deployment of the customizations and ISV models to production, everything that is in the UAT environment is deployed to the production environment.
So the question is, when Microsoft updates the production environment with the latest version, what happens if there are customizations in the UAT environment that are not in the production environment yet?
Are they deployed to the Production environment like when doing a manual deployment to production?
Just to expand a little on Mohamed's correct answer:
The updates Microsoft apply are the same as when you apply a service update or quality update to one of your environments manually - the installed packages are not affected.
The Sandbox (in your case UAT) to Production process is known as Self Service, which is the only process which updates everything at once. Its an insurance/safety net from Microsoft which ensures that your Production environment exactly matches your tested UAT environment, and reduces the possibility of problems during or after a Package is released to production.
