Hello everyone,I have read in the database point-in-time restore that Microsoft maintains automated backups of the business and financial reporting databases for 28 days for production environments. Does it mean that if I want to have a copy of prod data. It is always date today minus 28 days? Thank you.

You are right, Microsoft takes automated backup in production for the last 28 days and in UAT(sandbox) for the last 7 days.
But it doesn't mean that refreshing the database from prod to UAT will take only 28 days backup. It will restore the whole database, but some of the data will not be restored like, Enabled Users, batch jobs processing(concerted to Withold status), some encrypted data.

The copy of the production database is a copy of the entire database (minus some details which are described in the documentation https://docs.microsoft.com/en-us/dynamics365/fin-ops-core/dev-itpro/database/database-refresh). Not just the last 28 days.
The retention means that you can go back no more than 28 days if you restore a prod backup. But I can't imagine any situation where you would like to restore your prod database from more than a month ago.
