In D365 Finance Trial, can I create a new company without demo data?

I'm just trying to scratch the surface with Dynamics 365 Finance, and with an administrator background I would like to tryout the setup process, and to see the setup process without demo data.

When I tried Business Central trial, there was an option to create a new company from scratch, but I do not seem to find that option in D365 Finance. Is that a limitation of the trial? Or is it a limitation of my searching skills?

I'm not sure what you're allowed to do with the trial environment, but can't you simply create a new legal entity by yourself (in Organization administration > Organizations > Legal entities)?

The answer regarding a VM deployment won't help you with a trial environment.
