My company currently operates with an old DOS based system which communicates with SharePoint 2007. We are in the process of changing to Microsoft Dynamics 365 and SharePoint 2016.
We have some forms that were built using Microsoft InfoPath that are housed in SharePoint 2007 and they communicate/pull customer information from our current DOS system. These forms have logic built into them and distribute to different emails based on the options the users choose.
I plan to re-create these forms from scratch as some of the information is outdated and/or changed and wanted to know if InfoPath is still the correct tool to use. It would be nice if the form could be accessed from a mobile device and SharePoint 2016. It would need to communicate with Microsoft D365 as well.

This article says SharePoint 2016 still support InfoPath Forms Services.
And there is also another article says you could transfer your InfoPath form to Power Apps first and then deploy to Dynamics 365.
I recommend you to move your post to Power Apps Forum for more professional answers.
