Update sort date on Activity for millions of closed records

Challenge:

We want to use sort date on Activity

Obstacles:

Large volume (Millions of records)
Completed/Canceled status
Do not change modified by or date
Online limitations (no direct SQLs)
Activity consist of many entities

Story:

Now that we got the feature to configure our own sort date our client would like to utilize this. Unfortunately its not as easy to turn the sort date functionality on. This field is unpopulated so we need to first populate it. Doing so with update would require us to first open the activity. This causes the modified by and date to be overwritten by the change. The user would be confused to discover that her old activities now belong to some service user instead of her.

Short Version:

Simply put we need the sort date, but we do not want to change anything else on these Activities. Any suggestions?

So we can declare this as impossible? How about workarounds? Thinking outside the box?
