We recently configured/ install org insights on an environment following the process suggested. Even though we selected a specific org, insights seems to have become available on all the orgs within the tenant.
Is this normal behavior? What are the risk for a production environment if something goes wrong with the install even though the org selected was a dev/uat instance?

Valid concern. Microsoft changed the way of Organization Insights solution now. You need not to install anymore or update it. It’s available as metrics in Admin center.
