I would like to view in the drop down menu of Convert to I would like to view/select project activity as it shows in the dynamics 365 activity menu
question is? is possible to apply this sort of set up into convert to?

You can customize ribbon and add a button, the custom button can also be visible on outlook. On click of button you can write custom logic that will convert the record to Project activity.
