How can I add additional Priority filter options to the activities list?

I'm afraid you can't add new filters to that grid because it's not customizable in that way.
Hi Jaydeep,
You can try to add filter you need through clicking ‘open advanced filtering pane’, which can't show drop-down list like ‘Due’ and ‘Activity Type’ format in the view but can filter results as your need.
AS you mentioned, you want to add priority filter to the activity list, you can set it as following screenshot:
Opening advanced filters dialog and add 'priority' row.
Setting priority with value as you need.
