Why doesn't the Dynamics 365 navigation menu work?

I grabbed the following screenshot from a YT video:

As you can see the arrow right of "Sales" points down and you are able to access the menu by clicking on it.

However, in the fresh trial environment I recently installed the arrow points to the right and I'm not able to access any menu:

How can enable the menu so I can access the Settings of my Dynamics 365 environment?

As a former user of Dynamics CRM 8.x  this is all very, very confusing. I can access apps, apps and more apps just about everywhere, but there isn't a basic navigation menu where I can access the entities and the systems settings? Wtf?

    Hi,

    Since this is a newer update of D365 v9.x, the default organization will open in Unified Interface always. To toggle this setting, you'll need to to the Power Platform Admin Center (https://admin.powerplatform.microsoft.com/environments/) and then select the environment

    Then go to Behavior

    And then turn this setting off
