Enable UI

We are D365 on-premise all are users use legacy/classic interface. We are now planning to shift users to the new UI. 
 
When I check system settings I see below, does that means once UI is enabled, I will have no access to legacy/classic interface?
 
How do I get a copy of the existing classic url in UI app? Should i have a separate app for users or same app but obviously they will still continue to see based on security roles. 
 
Do i also need to say Yes for Show legacy D365-custom app option? what does the recommended part under this means?

    After the /Enable only the Unified Interface/ option has been turned on, it can be turned off again.
    For the best user experience, Microsoft encourages users to use the modern unified interface.
    In Unified Interface only mode, all model-driven apps, including apps created for the legacy web client, run in the Unified Interface to provide superior performance and usability.
     
    The legacy web client app, also known as Dynamics 365 - custom, is hidden from end users when a new environment is provisioned.
    The /Show legacy D365-custom app/ option enables these apps for users.
