This happens when a user is replying to an email or creating a new email in CRM.
1) User will be typing and while typing the content of the email, the cursor jumps to the top of the email and remove the content or part of the content

The user can sometimes retrieve the information by using the ctrl Z function to undo, however this does not always work.
2) User will be typing the content of the email and stop for a while (to chat to someone or answer the phone) before continuing - some words, sentences and even the full content of the email will just vanish - ctrl Z returns the content, but not in all cases.

I test in my North America instance and everything worked well.
You could try the following points.
1.Clear your cookies and caches in browser.
2.Disable all the JS functions and workflow, business rules in email activity.
3.Change other browsers.
If this issue still exists, please raise a ticket to Microsoft for more professional help.
