Does anyone know if there is a built in process that handles/stores incoming emails into Dynamics 364 while it is in admin mode? Emails come from a web form. This is for a solution deployment in a production environment and are cautious if a roll-up to a previous backup is require there may be a loss of data.

First of all, you can only place Sandbox in admin mode not Production Instance and normally email mailboxes synced to Production instance.
But if you do have Sandbox synced with exchange mailboxes, it should receive the email in Admin Mode according to this
