I'm wondering if there is a way to export content from a guides build into a doc format for SMEs to review ??
There are a couple of options to export Excel from the active guides online view, however - the Steps are not in order.

Here is an idea post which is similar with your issue.
Guide data portability / import/export
You can vote for it in order to drive it to be improved.
You will need to use the Dataverse API, or set up a Power Automate Flow to accomplish this as it is not doable out of the box with existing Dynamics 365 Guides capabilities. All guides content is stored in the Dataverse, so it is a matter of building something that traverse all the steps and then grabbing the content you need.

For example, the Power Automate Flow you create can start with the last step of a guide, copy content you need from the step (e.g. images, videos, instruction text) and put it into a doc, then traverse to the step that is linked previous to that (prev step is stored).
