When you click on an email address in Dynamics 365 it opens an Outlook window to send the email. Is there a way to have it open as an email activity inside of Dynamics 365. If you are trying to tie all activities to a contact this would be more efficient.

I don't think there is any straight forward/ supported way to achieve this and If I am not wrong, its a browser behaviour which opens an email in outlook.
You could however have a custom button on a contact form to open the new email activity record for that contact. There are support JavaScript methods to do that.
