We have some views that are used for business purposes where we display the description field from an email related to a Task.
In the Unified View the html is displaying with all the mark up - whereas in the old view it's rendered correctly as readable text.
Is there a setting that affects this?

There is no such setting as far as I know.
Are you using CRM Online or on-premise ? This was a known issue in UCI almost a year back and it's already fixed. If you are using CRM Online then I would suggest to open a ticket so that we can investigate it further but if you are using CRM on-premise then try to upgrade to latest update rollup and see if it helps.
