If you search "wave dynamics ax" you'll find a variety of blogs on the matter, but essentially a wave is just a way of grouping together orders in a sales picking process based on different factors. For example based on a specific delivery date, method of delivery, etc.
I came across this blog that's a quick read. Hopefully this will give you a better idea of the process.
