Hi Stephan, it seems that only the first email sends and the rest are blocked when the to email is changed. Any ideas on that?

Thanks for your reply. Which CRM Entity the workflow would need to be set against for a Marketing Form that get's submitted?
You can use a Customer Journey and the Workflow - tile (which uses pre-defined CRM Workflows).
Within workflows you can manipulate and change any Contact data.
For the Notification:
Create an E-Mail and switch the target address from {{ contact.emailaddress1 }} to your personal address.
Then place it in the Journey.

Yes, it is possible to auto update selected fields of a contact both by business process or using a workflow.
As for receiving an email notification whenever a marketing form is submitted - it is also possible. However, if many forms were submitted - you would receive as many emails. Is it exactly what you need? You would be able to see all forms submissions in the insights or contact record updates / creates anyway.
Could you please explain your business case a bit more, so that we could propose the best solution?
