Today I have been trying to update a yes/no field on a contact record based on the values in fields on an opportunity. The workflows shows that it runs successfully but the field on the contact record doesn't change. Is there a trick to using fields on opportunity records to update contact records? I want to use the contact field as criteria for a marketing list.
This is my workflow which runs in the background and has scope set to organization:
Starts when record is created, record fields change
Check Condition: EMR Demo Date 1 Completed By contains data AND EMR Demo Date 1 is on or after 4/24/19 AND opportunity status is Open
Check Condition: Potential Customer (Contact).Added to Air Support is No OR does not contain data
Update: Set Potential Customer (Contact).Added to Air Support to Yes

I combined the conditions as you suggested and switched Potential Customer (Contact) to Contact. The result was the same. The workflow shows it executed successfully but the contact record is not updated.
Then it occurred to me the EMR Demo Date 1 Completed By field is a lookup field. I created a new text field and a workflow to copy the lookup value to it. Then added that new field to the workflow's check conditions. I left Contact as the entity to update in the original workflow. When I tried the original workflow again the contact field in Contact was successfully updated. The workflow is now set to start when there are changes to the copied text field and the date field. So far it is working properly.

If the workflow runs successfully, but the fields are not updated, then it is most likely that the workflow condition setting is wrong. The workflow determines that the condition is not met, so the update field is not executed.
Please check the workflow condition configuration carefully.
In addition, I noticed that the entity you updated is Potential Customer (Contact). If you change it to Contact, could you successfully update the field?
I recommend that you set the two conditions together rather than separately.
