Hi,

Regarding your question about disabling the total discount in the sales order header

Our team did not find the same interface in Dynamics 365 Sales, so can you tell us which product in the Dynamics 365 family you are using?

Since we are not sure which product you are using, we can only suggest some general solutions

If you want to disable the modification of a field in the form, you can change the field to "read-only" or "hidden" in the form or more extreme, just delete the field (but we usually do not recommend this, the field may have some business logic and deleting it directly may cause business errors), and then you need to save and publish the form

In addition, you can also enable column security for the field, which can restrict access to the field to a particular user or team. Please refer to the following document for details
