Any suggestion on how the best way to change the Case Number format.
Instead of CAS-54429-D8W7C8 i want to change it to CAS-AAA-XXX-2020-00001
To note : 2020 (is the current year) and 00001 (should be auto-number)
What is the best way to create this new format and?

You can't change the out of the box case number formatting to achieve this.
You will probably have to add a custom field and use custom code to do the numbering.
Although it is possible to create autonumber fields out of the box now, I don't think the numbering options allow for automatically adding the year.
OOB you can only change the Auto Number Prefix as per this documebtation https://docs.microsoft.com/en-us/power-platform/admin/change-auto-number-prefix-contract-case-article-quote-order-invoice-campaign-category-knowledge-articles
However you could create your own custom autonumber field, you can do this with the Autonumber plugin https://jonasr.app/2017/10/anm/

You can use the Auto Number Manager from the XRM Toolbox to edit the Case Number (ticketnumber) field directly. The only downside is that you will receive an error when you attempt to open Auto-Numbering from Dynamics 365's Administration Settings page.

OOB it is not possible to achieve such Number format.
You can use the XRM Toolbox AutoNumber plugin to modify the formula of the OOB field as below.
But please note once 2020 ends you will have to manually update the year in the formula from 2020 to 2021.
After implementing this formula the Cases created have the Case Number generated as below.

I managed to follow the instruction above and created a new case number. However, can i replace AAA with the data within a lookup field? I have a field called Service contains 'HR', 'Audit', etc....
How can I manage create the new ID to be as such: CAS-HR-2020-0001 , CAS-AUDIT-2020-0001...etc...
Weird other solution than D365 is way to easy to do create such scenario.

We can change the OOB Auto Number Field Format from PowerApps Makers Portal (make.powerapps.com), in the same way we create or update any other Auto Number Field.

Changing Case Number is not possible in OOB way, you can use XRMTool box to change the AutoNumber Behaviour as suggested by @sam
