Is there a way to create a report that tells me which products are being added as line items to Opportunities?

Yes you can do this. I created a blog post to show you how this can be achieved.

It involves create a rollup field that counts the number of related opportunities. Once you have this variable it is easy to include into charts, reports and views.
To test this out, create an opportunity add a Product. Then manually trigger the recalculation of the Number Opportunities attribute by adding this attribute to the Product form and then clicking the recalculate symbol.
