we started a trial of 'Dynamics 365 Customer Engament' plan and we create 03 users also for that, 02 for Helpdesk staff and 01 manager; as the firts steps we assigned these users to a security group on the Office 365 Portal management and as second step, inside Dyn365 organization management, now when setting the user 'roles', what should be choose???
I choose these:

- Customer service app access
- Manager Scheduling
- Manager Knowledge
- Manager Customer Service
- Survey owner
- Survey services Admin
Is that right or should choose something more?

It is best to give users the minimal privileges required for their job.
These roles are a good start. If you also want to let the users look at customisation options, then you could add System Customizer
