Hello
am wanting to audit the changes in a field in one of our custom entities, I am getting the returns shown in the attached, what maybe the reason for this please? And is there a way of extracting the actual values?

Since I don't have any audit logs which is older that 2018/11. I could not repro the issue you mentioned in audit logs after 2018/11 as follow:
I wonder whether you could successfully open recent logs and see the audit field value? Otherwise, I believe only D365 BE engineer possible could help providing these log details. Thanks.

You could use the XrmToolBox plugin Audit History Extractor to extract audit data.
