How can I make Created By filed on New Case form in Customer Self portal to be editable? Now I can only see this, just minus line.

The "Created By" field is read-only and is populated automatically by the system when the record is created.
If you would like to track whom is submitting the record, you can pre-populate the logged in user into the Contact (or another field of your choice) using Entity Form Metadata.

Tnx for answer, it worked. But now I have issue with saving that field. When I go on view all cases page and to view details of one case I still see SYSTEM value for Created By field.

Glad the proposed solution worked for you.
As for the details page, you will need to add this new field to the Entity Form in order for it to be displayed on the details page.
The reason the Created By is showing "SYSTEM" is because the portal has no context of who the CRM user is that created the record, since the portal uses the Contact as the primary record of authentication.
Once you find the Entity Form that is being displayed for the Case details, you can remove the Created By and replace with the field that was mapped via the Entity Form Metadata.
