I suggest warehouse concept for vending machine is good enough and 2000+ in numbers is not any issue as per my understanding
Site can have multiple warehouse, so Site can be different place in the city where you can have vending machine..
for example,
Site can be - Railway station, Market Place, Public place and so on..
and in side Railway station you can have multiple vending machine
so you can have inventory storage hierarchy...
Please verify and update us with your findings.

Using warehouse is ok, you just need to decide whether you also want to have a financial dimension there as well, so you can keep track of all goods, sales and cost for each individual vending machine.

Hi,
I guess you might run into some issues since so many warehouses is quite rare. I am not sure, but you also have site and location next to warehouse. Maybe dig into this to see if those can match your requirements better.
Also maybe look at the Retail version of AX. They have a 'store' concept. A company with 2000+ stores is more likely, so you can see what architecture is used there.
