There is a language setting in the Field Service mobile app.
Open the app and get to your personal settings by clcking on "More" and then on your photo (where it says "More" again)
Click on 'Settings'
Verify the language
I have the newer version of the app enabled, so I'm not sure if getting to this menu will be different if your organization is still on the legacy UI.
