Is there a way to copy a record from the Lead Entity to a newly created entity using workflows.

Please define the term "newly created entity".
(1) Do you need the "workflow" to create a new entity before it copies data?
(2) Or do you mean you need the workflow to copy the data from the lead entity to a custom entity that will already exist?
You can do (2) with a workflow very easily.
You can do (1) with a workflow and some custom code such as a plugin.
