How we know which last CU ( CUMULATIVE UPDATE ) was installed ?
You need to split this into two questions as the platform and application can be updated to different levels (as long as the platform is newer than the application it should be ok).
Regarding the Platform, look at the version + build numbers on one of the binary files or in the Dynamics NAV Administration console (MMC).
Regarding the Application, look at codeunit 1 and get the version + build number either from it's version string or the code within it.
Now go and lookup the list of CUs for your major version - i.e.:

* NAV2017: https://support.microsoft.com/da-dk/help/3210255/released-cumulative-updates-for-microsoft-dynamics-nav-2017

Click on each released CUs until you find the ones with your platform and application version + build (it is in the headline of the individual pages).
