I have a on-premise CRM 2011 instance running on SQL2014 CU4? Any guidance on which version is most applicable for me? Will not be exchanging data with other Dynamics products, only with other SQL databases on my SQL instance.

Which connector are you referring to? this one:
There is a free middleware called ibs message broker which can do this job. We also have an sql connector so you can connect to any database which is odbc compatible.
