How customizable is the app?
Will we be able to add service items?
Will we be able to turn off cases, leads, competitors, orders, products, etc.
Will we be able to change what fields appear in the account lists view? Contact List view? Etc…
Will this work with our multiple company setup? - Limited access by company?

Yes you can customise it as much as you like, the other option is the Resco client that you can edit with Woodford.
It will work based on Business units but you will not be able to have multiple instances running on the client, you would need to delete the data and connect to the other instance for it to bring the data back from that.
