When I change the owner of a record of any entity and save the same, it automatically changes back to the owner of a record as an when it was at the time of creation!
I also tried to use assign to me or any other user in the organization from the taskbar of CRM and it also automatically changes back to the owner of a record as an when it was at the time of creation!
Note:- It was working earlier but don't know why it stops working!!!!
All help will be highly appreciated!

Are you aware of any recent changes made to your CRM instance since the time it stopped working?
Do you have Auditing enabled? If yes, what changes do you see in Audit history for those particular records?
Please check for any plugins/workflows which might be contributing to this issue.

Thanks for your reply, I checked everything and found nothing fruitful! I am still figuring out the issue but not able to get through the same.
Can you suggest anything else or better if we can connect!
Things to check:
1. Are you admin
2. Is the owner field Read-Only on the form
3. Is there any workflow/plugin that is being triggerred on the owner change and reset the owner to its original creator?
4. Do you have Append To privilege on the user entity and Append privilege on the entity where the owner exists?
