We currently have our Dev and Production environments setup to use the exact same Email Server Profile? We seem to be having an issue with certain email processes kicking off in both environments. Ex. Process set up to email user when a new account is created. It seems that the system kicked the process correctly in Production...but then also kicked off an email from our Dev environment.

We understand that you have created a similar email profile for both Dev and production environment.
Definitely this issue has nothing to do with email profile.
Email profiles acts like connection strings to your exchange sever. Dev or production to connect to the same Exchange server should contain the same details.
Request you to isolate the issue with below details:
--> Hope you are using server side sync , when you are trying "Test and Enable" for the mailbox, select the check box to sync to the select organization.
Then check if you are still facing the issue.
