My opportunities get several open calls bound to each opprtunity.
I need to create a view where I want to display only the latest open call, for each opportunity.

Thank you for your query.
We cannot add ONLY latest ( or top 1) activity in a view. This means, these kind of aggregations are not available in a view or Advanced Find.
To achieve this, you can create set of fields in opportunity entity and update Last Activity (Phone Call) information using a process/flow.
Then you can use these fields in the view.
