In UCI, I am only to search for accounts and contacts for the regarding field on activities. I am unable to search for opportunities. This problem does not exist with the old interface.
Known issue?
This was because the Opportunity entity had not been included in the app. Unsure what effect including an entity has, given that all the forms, views and functionality were available before it was included.

Which search you are talking about? Please provide more details. The setting "Readonly in mobile" under Entity definition affects some functionalities in Unified Interface. Check if this is enabled for opportunity entity.
If checked, and still an issue, please provide more details/ screenshot etc to understand what exactly you are referring too.

I tested in my environment. I can search opportunity without any problem. I am using V9.1.
Please raise a ticket with Microsoft.
