Hello,
I have a workflow and one of the steps is "Send Email", not using a template.
Now this option still adds html tags: "<html><head><meta http-equiv="Content-Type" content="text/html; charset=utf-8"></head><body>"
then my message comes on.
I want to send a plain text message, and the example shared multiple times here:

No longer applies because it's been 4 years, and I'm talking about D365.
Following the example from above, there's a value "steg_sendplaintext" that exists in CRM 2013 but it's not present in D365.
So my question is, it's 2018, we have Dynamics CRM 365, so we still have to do a plugin, when a simple checkbox could be added to the email entity ?
If a plugin is required, is there an updated example that someone could share please ? While the examples above are very good, they're outdated.

As you said, it's 2018, the above suggestion should work for you. However the plugin you have in those blogs still hold good and supported. So if you want to go for plugin, you can refer the same code.
