Hi,
Can anyone advise why I cannot add any further conditions to my flow branches? And what is a way around this? Recorded video to show what I mean.

Microsoft has set a limitation to BPF and you could find this through this article.
You could reduce your steps or develop a custom workflow (plug-in) to achieve your requirement.

Yes, I read this article before posting. None of the criteria applies unfortunately. I can still add stages and it's all on one entity. It's something specific to conditions.

Click (+) and try to add condition from there instead of drag & drop. See if the option is disabled.
Also try a different browser, save/activate/deactivate to start fresh.
If nothing works, recommended to create a support ticket with MS.
