Hello experts,
There is an entity, in which, any record might use one of several predefined email templates for sending email notifications.
At the moment, I have two issues have not figured out yet.
1. How to add an email template lookup field for the entity?
2. How to dynamically change the email template based on look up value in workflow?
Any help is highly appreciated! For the moment, I cannot write custom codes, so options are limited to OOTB features.

I see what you want to achieve now. Yes, you are right. We can't create a lookup field for email template, that's how email template entity is, we can't create any relationship from/to it thus no lookup field.
This is certainly achievable by custom code.

Yes, that is the current implementation, however, this workflow has to be changed by a technical resource, every time a new template is added by business user. We want to have a look up capability to eliminate this step. It sounds like not possible OOTB, only go through a custom coded plug-in.

You shouldn't need to create email templates as a lookup field. If you have several predefined email template, you can achieve this easily with OOB workflow using If-otherwise conditions, something like this:
